I am a self-taught simple cook & a self-professed recipe rebel!  I rarely follow a recipe verbatim - usually straying from measurements, ingredients and flavorings to add my own twist!  I encourage you to try my recipes-- but please add your own variations & special touches!  
All recipes featured have been kid & family tested and approved!  

ezpz oatmeal waffles or pancakes

2 cups rolled oats
1 cup water
1 cup Almond or Cashew Milk
1 banana
1/4 tsp sea salt
1 tsp vanilla extract
2 tsp ghee

  1. Place all ingredients except ghee into a blender and blend until smooth.

  2. Let stand 15-20 minutes until batter thickens.

  3. If batter is too thick to pour easily, add a little water.

  4. Heat ghee in frying pan or skillet.

  5. Pour batter, by 1/4 - 1/2 cup, into pan and cook for 2-3 minutes on each side.

  6. For waffles: pour into a heated waffle iron and cook for 10 minutes.

 

  • Try adding chopped walnuts or to the pancake batter.

  • Try topping with raw honey, maple syrup, raw almond, or peanut butter, jam, chia seeds, shredded coconut, or fresh fruit.

ezpz green juice

2 cups organic spinach or kale 
1 large organic cucumber
1 organic green apple
3 stalks organic celery
1 inch piece of ginger (peeled)
1 lemon or lime (rind removed)

 

  1. Rinse all ingredients and peel if they aren’t organic

  2. Pass all ingredients through juicer.

  3. Drink immediately -- air & light cause the juice to lose its nutrients!  

ezpz lentil stew

1 lb organic green lentils

4 cups organic chicken or vegetable broth

1 cup water

1 15 oz. can organic diced tomatoes

4 carrots
4 celery stalks
1 large onion

1 shallot

1 Tbsp sea salt then add more to taste at end
1 Tbsp ground pepper

1 tsp cumin

2 cups raw spinach, kale or supergreens (add at end of cooking)

  1. Put carrots, celery, onion & shallot into food processor and chop finely

  2. Place all ingredients in crockpot for 4-5 hours on high or 7-8 hours on low

  3. 15 min before serving. chop up greens and let them wilt from heat of the stew
     

  • For a heartier meal -add organic chicken sausage if desired 

  • Serve with brown rice 

ezpz chocolate that's good for you!
 

8 oz. 70% or higher chocolate 

1 Tbsp Coconut Oil

1/4 cup toasted slivered almonds or walnuts
1/8 cup goji berries or cranberries
1/8 cup toasted pepitas

zest of one organic orange 

Melt chocolate & oil over a double boiler or in 30 second increments in the microwave.  Pour onto parchment paper or into individual paper mini cupcake wrappers.. then sprinkle nuts & berries & zest .  Allow to cool for 20-30 minutes.
